PARVEEN MANIYA SPEEGLE
In every household, there’s always a recipe that holds a special place in the heart of the kitchen. For our family there is one recipe that’s guaranteed to bring us together no matter how far apart we are. It’s our carrot Achar.
It’s just not any achar though. It’s a recipe that’s been passed down for generations.
It all started with my great grandmother, who came from a small village where food was a celebration of seasons. She had the ability to balance flavors in ways that felt both exciting and comforting.
I still remember the days when my mom would stand by the kitchen window with a big bowl and a wooden spoon making her carrot achar. The air filled with warm aroma of mustard seeds, turmeric and other spices.
When I was old enough my mom began teaching me the art of making the carrot achar. There was no written recipe, just an understanding of how much of each spice to add. A little dash of this, a handful of that and always a pinch of love!
